A comment on the restaurant industry and consumer ignorance in relation to raw materials,
seasonality and sustainability.
The octopus and calamari served in restaurants in Greece during the summer are frozen.
Their fishing seasons are in the winter
While serving frozen seafood, that has been fished during the proper season, (may be better for the ecosystems and the environment) should be applauded by guests, they see ‘frozen’ on a menu and they automatically assume it means poor quality.
I believe it is important to eat local, fresh ingredients, but it has become a gimmick and a marketing ploy at this point. If something has been flash frozen on the fishing boats, legally, we have the right to claim it is ‘fresh’ no matter if it is being served a year later.
Respect ecosystems, respect the food you eat and respect the guests that chose to dine with you.
